Spooky awareness
Happy October! This month was filled with pink ribbons, fall decorations, sweets, tepid breezes, and lots of thought in being someone else for one day. October is also national cookie month in which these delicious treats were perfect for every occasion of the month.
October is Breast Cancer Awareness Month to increase awareness of the disease. While the majority of people are aware of breast cancer, this month is to help remind many to be aware and make sure to take measures in detecting the disease for themselves and advising other to do the same. "We have made a lot of progress but still have a long way to go and need your help!" (NBCF)
Yields about 2 dozen cookies
Ingredients:
½ cup (one stick) butter, softened
1 cup light brown sugar
3 tablespoons granulated sugar
1 large egg
2 teaspoons vanilla extract
1 ¾ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 ½ cups semi-sweet chocolate chips
1 ½ teaspoons instant espresso coffee powder
1/4 cup cream cheese, softened
2-3 drops of red food coloring, (It is easy to over dye it so add cautiously until you get your desired pink color.)
Preparation:
Preheat the oven to 300 degrees Fahrenheit.
Place the butter, brown sugar, and granulated sugar in the work bowl of an electric mixer fitted with a paddle attachment. Beat on medium speed for about 30 seconds, until the mixture is fluffy. Beat in the egg and vanilla for 30 seconds longer, until well combined.
In a mixing bowl, sift together the flour, baking powder, baking soda, and salt. Add to the mixer, while beating on slow speed., Beat for about 15 seconds, stir in the chocolate chips and espresso powder, and mix for 15 seconds longer. Lastly, add cream cheese until all ingredients are thoroughly combined but do not over mix and then add the food coloring.
Prepare a cookie sheet with about 2 tablespoons of shortening (or use a non-stick spray). Using a 1-ounce scoop, or using a 2 tablespoon measure, drop the cookie dough onto the cookie sheet in dollops about 3 inches apart. Gently press down on the dough with the back of a spoon to spread out into 2-inch circles; there should be room on the sheet of six or eight cookies at a time. Transfer to the oven in batches and bake for about 20 minutes or until the cookies are nicely browned around the edges. Bake for a little longer for crispier cookies.

Covnersation 16: My Summer Story 2015

The weeks that come before are only a climb from balmy spring, and those that follow a drop to the chill of autumn, but the first week of August is motionless, and hot. It is curiously silent, too, with blank white dawns and glaring noons, and sunsets smeared with too much color.”

Summer to me is this one scene that continues to play over and over as the word is let out into the air like a single sigh of content. It forever flickers in single frames of one moment in my mind.
The sun is starting to set and an intense glow rains in through the window leaving you in a content squint or simply your eyes are completely closed basking in the rays as if you can absorb it to feed your mood.
In the passenger seat with your barefeet on dashboard, the windows are down, it's hot yet you can't seem to turn on the air. The warm wind licks at your face as though it's casting faint yet still amazing memories.
The wind holds every feeling you had of freedom, love, courage, fun, and maybe even tears.
Your
hair is whipping like crazy at your face and you have the biggest smile
you've had all summer on your face despite it being the end.
The
car radio isn't blasting but accompanies the wind and warm sun in your
reminscing. The song is the song that's just a mere coincidence as the
lyrics write the story you've lived through for the past 3 months.
That one song sends you in a tailspin and will forever be the song to describe that year, it holds every smile, tear, laugh, and sigh of content. That song makes your summer a music video as each amazing and crippling moment chooses to go fast or slow in dependence on that song.
So with taking everthing in, the warmth, the glow, the song, you're not afraid to say so long sweet summer.
I've compiled a list of songs that represent not only my summer but the summer of anyone I could've gotten in contact with and had the pensive look then slight smile on their face as they automatically knew.
P.s. It's a bit long but some of them might become an anthem for a particular memory you'd never thought to cherish with just any lyrics.
